The kids and I made one of our favorite fall treats today. We wanted to share the joy (and the recipe) with you.

 

 

 

Pumpkin Cookies

Ingredients

1 1/2 cup canned pumpkin ( 1 regular can)

1 egg

1/2 cup oil

3/4 cup applesauce

1 1/2 cup sugar

2 1/2 cups flour

1 1/2 tsp cinnamon

1 1/2 tsp salt

1 1/2 tsp soda

2 1/2 tsp powder

1 1/2 tsp vanilla

1  cup chocolate chips

 

Directions

  • Preheat oven to 375
  • Mix ingredients in a large bowl
  • Drop by large spoonful onto a foil lined cookie sheet
  • Bake for 12 minutes

*Don’t let the name fool you. These are really yummy and light, and kids even like them!

*I use sucanat and I replace half of the flour with fresh whole wheat flour.
